The chef, who put up 5m of his own money to keep Gordon ramsay Holdings afloat, says he now realises his mistakes in try- ing to expand too fast overseas. He said: This has been the most strenuous and fraught 12 months but most importantly we did not panic, even though we were really seriously under scrutiny. But well learn from the mistakes we made. He said hed been under pressure to do a Tom aikens by putting the business into flat-pack administra- tion and then reopening. I could have saved myself 5m. But it would have meant putting staff under a bus and screwing our suppliers. Last year profits at GrH dropped almost 90 per cent but these are expected to be around 3m this financial year.
